From the chalky veins of Grauves, this cuvée is quiet power. Old-vine Chardonnay—some over 50 years—fermented without sulphites, raised to speak in purity, not polish. You pour, and the glass shimmers pale gold, the bubbles fine and steady like someone who knows they’re being watched.
On the nose, it’s all tension and grace—green apple, citrus oil, warm brioche, and crushed seashells. Then the palate takes over: creamy mousse, tight acidity, lemon zest and a mineral line that lingers like a hand on your lower back. It's structured, yes. But there’s a softness to it—like control willingly given.

Serve with scallop carpaccio, oysters, or anything involving silk napkins and very little small talk.
